Cooking for one, Number One

I hate to start my blog this way, but tonight I did not cook from scratch. However, this meal was still tasty! I visited my local grocery store (aka Stop and Shop) and decided to try one of Barefoot Contessa's frozen skillet meals. Tonight, I tried the Garlic and Ginger chicken. It was really easy to prepare, only took about 15 minutes total. One note, cook the rice for about three and a half minutes in the microwave instead of just three minutes, mine was slightly undercooked. Otherwise, it tasted delicious! I would give it about 4 out 5 stars.
